Blueberry Bacon Pancakes

I use the Great Value brand pancake mix. I substitute the water with equal parts sour cream and milk, this gives the pancakes a nice buttermilk flavor and makes for a fluffier tender pancake.

Blueberry Cobbler

I use this recipe with the following changes; 4 tablespoon of butter, it makes the cake more crunchy and less greasy; 1/3 cup of sugar, since we pick our own blueberries they tend to be sweeter then the supermarket varieties; 1 1/2 cups of blueberries, 3 cups is way to much, we experimented with this recipe and found that 1 1/2 cups yield a good ratio of cake to blueberries; instead of sprinkling the blueberries, I spoon them in and several spots, like a more traditional cobbler, this lets the cake rise and fall over. If you go to the Bisquick site and read the reviews for this recipe, the number one complaint is that it bakes flat and doesn't  rise, the second is to much blueberries.

Please note - We are not bashing Bisquick on this recipe, 90% of the reviews are 5 stars, this is just our preference on how we like it, and a way to cut back on fat and sugar (from the same person who puts bacon in his pancakes). It is an excellent recipe for a quick and easy cobbler.
